2. Potato
Aroma group: Earthy, Sulfuric
Aromatic features of the sample
• Smells like boiled potatoes.
• Strong and striking, even when mixed with other aromas.
• This aroma is due to methional, which forms during roasting.
The smell of “potato” in coffee
• Common but usually not dominant.
• If it were dominant, it would indicate poor bean sorting.
• In moderate amounts, it adds a distinctive character to the coffee.

Coffee tasting
• Found in Costa Rican, Colombian Tolima, and Honduran coffees.
• Also appears in some East African coffees, especially Zimbabwean.
• Less significant in Central American coffees.
